Brown Rice Salad

Ingredients:

  • 2 cups of Brown rice
  • 4 teaspoons of olive oil
  • 2 teaspoons of vinegar
  • Salt to taste
  • 1/2 tablespoon of black pepper
  • 1 cucumber
  • 2 tablespoons of finely chopped carrot
  • 1 apple
  • 1 capsicum
  • 2 teaspoons of finely chopped coriander leaves
  • 2 tablespoons of peanuts

Procedure:

12 Brown Rice Salad

  • Fry the peanuts in a pan and remove the peel.
  • Cut the cucumber, capsicum and apple into small pieces.
  • Take four cups of water into a bowl and boil it.
  • Add little amount of salt to taste and brown rice to the boiling water.
  • Finally add olive oil, vinegar, black pepper, sliced cucumber, carrot, apple, coriander and peanuts to it.
  • Stir this mixture well.
  • After two minutes, off the stove.
  • If needed we can also add potato, beans, tomato and leafy vegetables.
  • Now hot and tasty brown rice salad is ready to serve
